Instead of using a preset "scale to X", try "no stretch".
Yet, with Scope, that is the widest aspect ratio on Digital Cinema, you can't avoid letterboxing for 2.75.

Well, in-house (that is less serious), it does cause duration difference of the video in an editor, so it could end up in an increasingly bad synchronisation of different essences. The MediaInfo program is reporting the file(s) on Frame Rate Mode as Variable. It states 24.000 fps but it has minimum and maximum also, giving a 0.004 tolerance and doesn't report number of total frames. The thing is that I observe the issue in Premiere, the import of the ProRes back to DCP-o-Matic doesn't show anything out of the ordinary. That I didn't quite understood......DCP with a CPL identical to the original.
Identical would mean having the same elements and UUID also, but that can not be the case.

I had the same issue, since upgrading to 18.04, having the previous version of DCP-o-matic automatically uninstalled.
It's been more than three weeks from ClavdioV's post, but for whatever help might be, the work around I used was to install the latest (at the time) test version, 2.13.20
