Maybe you decided to use the 'simple' interface after the first start? Many options are hidden in simple mode.

Go to preferences -> General and change 'interface complexity' to 'Full'.

If I understand correctly, there is no way and no need to click the VF tab under subtitles. If you want to subtitle an existing DCP as a VF, you have to click Use DCP video as OV and make VF Use DCP audio as OV and make VF Then add the subtitle file as 'normal' content. Don't know if I understand all your questions - but, you should use one of the Ryzen machines as the master. Using very fast machines as encoding servers/slaves is limited by network saturation. It is always best to do local encodes on the fastest available machine. You may improve this by using 10G...
