MBR is the right choice for DCP transport/ingest discs.

I would usually assume that an NVMe SSD is an internal disc, so should not be used for DCP transport/ingest. In that case, GPT is the better choice for a disc that remains on a computer as DCP storage.

Unless you put it into an external USB-NVMe enclosure and use it to transport DCPs to a DCI server. Then MBR is the right choice.

And if it's EXTERNAL 3TB Single partition, should it be MBR or GPT?

You should never use disks larger than 2TB for server ingest. It's no problem to have large discs as a computer attached DCP storage - but for transport to the DCP/DCI server, it must be max 2TB disk (not partition, but total disk), MBR, ext2/3 or NTFS.
