You mean WHILE creating the DCP with DCP-o-matic, or AFTER you have created a DCP with DCP-o-matic (that is, adding subtitles to a finished DCP)?
There is a subtitle tab in the program, and a section on subtitling in the manual.

For that you would need to try out version 2 of DCP-o-matic, which is still under development:

With that you can import an existing DCP as content then also import some subtitles to add to it.

Hi,
Is it possible to add Cinecanvas XML supplied subtitles and package as a stream overlayed by the server/projector?
Also, for multiple subtitle streams can you repackage with just the subtitles in the new package and referencing the original package to save disk space and ingest time?

You can add timed-text ('CineCanvas') with version 2.x, but versioning/multipackaging is not possible currently. You have to create three separate DCPs. You can only save on the encoding time, not disc space.

Hi, is it possible now to add a subtitle track to a finished DCP (done with whatever soft). What format does the subtitle need to be? What should I be careful about? Thanks.

Yes. You need the subtitle in SRT, ASS, SSA or XML (DCP) format. Add the DCP to a new project, then add the subtitles. Just be careful that your frame rates all agree, and it should Just Work.
