Could you try the following steps?
Go to System Preferences
Security & Privacy
Privacy tab
Scroll down to select "Full disk access"
Click the lock and enter your password
Click the + and navigate to /Library/Application Support/com.dcpomatic/dcpomatic2_disk_writer
Then close and restart DCP-o-matic Disk Writer (and maybe reboot?!) and try again?
It's strange that I don't have to do this on Big Sur (the newest macOS I have available), but maybe they changed things in Monterey...

Looking good so far on the iMac M1. Will try after on the Mac Pro Intel.

Great - thanks. Now I wonder if the writer can ask for that permission...
I'll put the changes into a "proper" test release of DCP-o-matic and perhaps you could give it another try then.

As for DOM Disc Writer asking the permission, it's probably possible: if I'm not mistaking, I've seen other software asking for it.

Not such a bad idea anyway to have such a request on the system level as a last chance to not ruin something.

Yes, I think it's possible but it seems quite badly documented, even by Apple's standards

Yes.
One thing is certain: the 18 apps and processes that are on the list on my iMac (some authorized, some "waiting" to be authorized) don't always get on that list in the same fashion. If memory serves me right, some apps will have instructions pop up on how to get the app on the list, others put the app on the list and the OS alerts you that you have to authorize the app.
In any case, thank you for your diligence in getting this problem solved.
