How can I add separate audio tracks to a DCP-o-matic film?

First, add your audio files to the film using the ‘Add file(s)...’ button (as discussed here).

Then you can go through each file that you added: select one, and use the mapping in the ‘Audio’ tab to select how the audio file is mapped to the DCP's audio channels (see the manual here).
